Review menu margin and sales mix
For the menu and stock lead. Reports → Menu profitability compares costed
recipes with selling prices and target margins. Inventory reports → Menu
contains Menu Engineering and Sales Mix for the selected
location/period.
Verify the recipe is costed and linked to the intended menu item, its yield and
portion cost are correct, and the selling price and category match. Missing
costed recipes or sales can leave the view empty. That is not evidence that all
dishes meet target.
Menu profitability shows selling price, cost per serving, margin, target,
and status. Review below-target items rather than blindly applying a price
increase. Supplier costs, portion size, incorrect links, and menu configuration
can all explain a mismatch.
Menu Engineering combines popularity and margin with classifications such as
Star, Puzzle, Plowhorse, and Dog. Its suggested actions are review prompts; they
do not automatically change the menu. Check selected category/action filters and
clear them before interpreting an apparently missing dish.
Sales Mix shows quantity, revenue, COGS, and margin for recorded sale
deductions. Compare equivalent periods and inspect cost coverage before using
ranking or average-margin figures. A costed dish with no sales can appear in a
table while there is nothing to plot.
Use the supported item/recipe editors for an authorised
change, then verify the saved price/link and selling flow. Exported estimates
are not proof of additional profit from a proposed change. Escalate with item,
recipe, location, period, price/unit, cost coverage, and observed discrepancy.
