# Order and receive from a central kitchen

For location stock leads and central-kitchen staff. **Console: Stock →
Commissary.** A configured commissary location supplies other locations in the
business. If none appears, ask the business manager to check its configuration.

## Request goods

At the requesting location, select **New order**, choose the central kitchen,
add the stock items and quantities, expected delivery, and notes, then select
**Create order**. Check units and the destination before handing it over.

## Run production at the central kitchen

Open the incoming order at the commissary location. The actions follow its
stage:

| Stage | Action |
| ------------- | ------------------------------------------------------------- |
| Pending | **Accept**, or **Decline** if the request cannot be fulfilled |
| Accepted | **Start Production** |
| In production | **Mark Ready** |
| Ready | **Dispatch** after checking the goods |
| Dispatched | Requesting location verifies and receives the delivery |

The current Console's **Dispatch** uses the ordered quantities for all lines. Do
not dispatch a short or changed order as though every ordered item was sent.
Resolve the difference with the stock lead before dispatching.

## Receive the stock transfer as well

Dispatch creates a **Linked transfer** and records stock leaving the central
kitchen. At the requesting location, open that transfer and
[confirm the actual receipt](/stock/transfers). Verify the received quantities
and destination stock before marking the commissary order received.

**Mark Received** on the commissary order updates the order's stage. It does not
by itself receive the linked transfer or add its stock to the destination. Check
both records at handover so an order marked received does not leave its transfer
in transit.

If dispatch or receipt has an uncertain outcome, reopen the existing order and
linked transfer before retrying. Keep both references when escalating, along
with source, destination, units, quantities, and the physical delivery result.
